Hello FLYERS!
What a journey this year has been. I believe we "tried out" four separate studio possibilities and just when we were about to give up, we found the best location ever. FLY FITNESS @ Carillon Point opens on January 3rd and I can't wait for you to see and experience the classes and events we have planned for you! 2010 also brought a lot of growth to Fly Fitness. We went from a one woman show to adding a fabulous studio manager, Mieka, and rock-star instructors like Whitney, Christine and Natasha. Next month, look for Rhianna and Mackinzie to join our team.
We've also added fun new classes like FLYFLEX--a lunch-time class, FLYMAMAS with HOT WHEELS--a stroller class for moms and babes and our most recent addition is FLY-UGI BOOT CAMP (see more about this class below).
To our Seattle FLYERS...Whitney and I are working on new classes and events for you. I feel very lucky to have found Whitney and from your comments and emails, I know you feel the same.
Thank you for your support and patience throughout this crazy year; I promise it will be worth the wait.

NEW CLASS FLY-UGI BOOTCAMP
Do you UGI? We do! You must to give it a try. This class begins with moderately paced cardio drills, followed by a 30-minute-sweat-inducing circuit using UGI balls. The hour is full of non-stop functional movement with an em phasis on core-definition, fat burning and strength. You'll be amazed at the intensity... and the results.

FLYFOOD Apple, Walnut and Endive Salad 1/3 cup walnuts, coarsely chopped2 teaspoons grainy mustard
1 teaspoon honey 1 shallot, minced 3 tablespoons cider vinegar 1/4 cup extra-virgin olive oil Coarse salt and ground pepper 2 red apples, quartered, cored, and each quarter cut into 8 wedges 3 ounces baby arugula, washed and dried (6 cups) 1 Belgian endive, leaves separated, washed and dried 1/4 cup fresh mint leaves, coarsely chopped 2 ounces soft goat cheese, crumbled
Directions
- In a small skillet over medium heat, toast walnuts, stirring frequently until crisp and fragrant, about 5 minutes.
- In a large bowl, whisk together the mustard, honey, shallot, and vinegar until well combined. Whisk in the oil until thick; season with salt and pepper.
- Add apple and arugula; toss to coat. Arrange endive leaves on four serving plates, top with apple mixture and scatter mint, cheese, and walnuts over the top.
Be sure to use crisp apples with a tart edge, such as Empire or Winesap, for this salad. Per serving: 272 calories; 5 g protein; 23 g fat; 13 g carbs; 2 g fiber.
